After a weekend of relaxing with the family and eating and more family and more eating you’d think that meal planning and food prep would have fallen to the side of my priority list. Not so! Knowing that I’d be at two family gatherings as the only vegetarian, I knew I’d need some back up in case my only options were side salads and potatoes (not the worst but definitely not going to keep me full for long). I ended up finding this delightful lentil walnut apple loaf that totally blew my mind. Even more surprising was that Mr. O. devoured it like it was candy. I guess I have no choice but to add it to my meal plans
I also started Graston on my knee as pretty much everything else has failed to work and I’ve heard this is a great alternative to get rid of this tendonitis faster. I’ve had two treatments and so far and though I don’t feel much difference in terms of pain with certain movements but I am noticing that it’s not as tight. Progress! I’m hoping with a few more treatments I can see some more progress.
In the meantime, I am going to continue cross training on the elliptical, do some yoga and get ready for tri club swimming on the weekend!
