Calling all Cooks

I’m not a horrible cook. Really, I’m not. Sure there have been some mishaps involving some burning, a few forgotten ingredients and smoke but overall, I’d say I’m fairly compentent in the kitchen (not to mention I’ve got mad chopping skillz a la Rachel Ray…BOOM!). What I do lack, is creativity. I can’t look at my fridge and instantly create a culinary orgasm (oh yeah…I went there). I get recipes here and there and Recipe.com is practically my BFF but what I’d really like is a good cookbook. Something that encourages clean, whole grain foods without breaking the bank trying to find obscure ingredients that I’m pretty sure don’t exist. I’m in a kitchen rut and I need some new stuff to try so I can reawaken my tastebuds and not have to make yet another “veggies are starting to go bad, time to make more pasta sauce” meal.

This is where I offer up a cry for help. Do you have any go-to kitchen guru’s/books/websites that you would recommend? Or any recipes that you’ve adapted into award winning entrees? Let me know.

    I’m starting a recipes page on my site this weekend and will have some great, healthy recipes. My BFF, Seana Roubinek, is a chef and sends me all sorts of fabulous and simple, but healthy ideas.

    Here’s one of her’s:

    Chicken Noodle Soup
    2 tablespoons olive oil
    3/4 cup diced onion
    3/4 cup diced celery
    1 tablespoon minced garlic
    Kosher or sea salt
    4 cups chicken stock, home made or store bought
    1 cooked rotisserie chicken, shredded
    4 oz. fresh fettuccine noodles or 2 – 3 oz. dried noodles
    4 teaspoons finely chopped fresh parsley leaves

    Directions

    In a Dutch oven, heat the olive oil and add the onions and celery. Add a good pinch of salt and sweat over medium heat until translucent. Add the garlic and heat a minute longer. Add the stock and bring to boil. Lower heat and add shredded chicken and noodles. Heat through – fresh noodles will cook in 3-4 minutes and dried will take 5-6 minutes. Remove from heat and add parsley, salt, and pepper to taste.

    Note: This recipe is very flexible and you can add any vegetables that you may have – I will often add mushrooms or fresh baby spinach (I add them with the onions and celery). You can also use whatever pasta you have on hand – macaroni, farfalle, or even tortellini.

    Makes 4-6 hearty servings

    I share a lot of recipes, although some may not be the healthiest. I think that there needs to be a good balance between healthy and delicious. Sometimes I post the recipe with the substitutions – using fat free evaporated milk or milk in place of cream, etc., other times I reference how I make them more healthy for my family.

    I have a recipe for some Tilapia that will go up this week that my family thoroughly enjoyed.

  7. Hi friend. I am by NO means a chef in the kitchen… but LOVE pretending that I am the Sweedish Chef from the Muppets. LOL

    I add a little bit of THIS and a little bit of THAT as I cook.

    It makes for a different tasting dish EVERY TIME! :) LOL
